Yam Bee Hoon Soup

Ingredients:

yam (cut them to cubes/ rectangles)
dried shrimps
mushrooms (soak and cut into tiny pieces)
minced meat
garlic (cut into pieces)
salt and pepper
bee hoon

Cooking steps:

Step 1: Deep Fry the yam for 1-2 minutes. Scoop the yam from the oil and leave them aside in a bowl.

Step 2: Pour the oil into a bowl (to be reused for other frying recipes) and leave some oil in the wok.

Step 3: Fry the garlic, dried shrimps, mushrooms and minced meat until the minced meat turns white.

Step 4: Pour 2 - 3 bowls of water and put in the yam and salt.

Step 5: When the water is boiling, add in the bee hoon and cover the wok with a lid. After 30 seconds, check if the bee hoon is soft. Once the bee hoon is soft, serve the dish with some pepper sprinkle in it. Do not cook the bee hoon in the soup for too long as the bee hoon will soak up the water and the dish will become dried yam bee hoon.

Optional step: Add green vegetables and button mushrooms boiled in the soup for a healthier meal.
